Our Ethiopia Yirgacheffe Natural is produced by Wolde Hirbe and processed at the Adame Gorbota Cooperative where Wolde is a member. The Cooperative is located in the district of Wenago in the Gedeo Zone within the Southern Nations, Nationalities, and Peoples' Region, Ethiopia. Wolde has been cultivating coffee for more than 30 years and his 10 acre farm located near the community of Jemjemo is meticulously managed. Wolde’s coffee has been consistently segregated and sold as a micro-lot since the inception of the single producer project brought to the region by our partners at Royal Coffee, which has helped him better support his family of ten.

This standout Yirgacheffe is processed using the natural method, in which the coffee fruit is allowed to dry on the seed (what we call it the ‘bean’). Coupled with a level of care rarely matched at any origin this process has yielded a cup offering a highly complex set of flavors and aromas without any of the process defects that almost invariably accompany this method of preparation.

The cup is complex and dynamic, with an array of aromas and prismatic colorations of acidy. Sweet fruit notes take center stage over the silky mouthfeel, with flavors of orange liqueur, ripe blackberry and fig predominating. As you savor the coffee a rich milk chocolate sensation carries you into a lingering finish that leaves an impression of a bright, fresh sangría.
