When we designed the first coffee menu for Fonte 25 years ago the specialty coffee landscape was very different than it is today. Most producers had no experience evaluating the quality of their own product. All coffees from a given area or farm were routinely mixed together in the processing, blending the excellent with the mediocre with the bad. It was a very commodity oriented mind set at the time, and it reflected the values of the coffee industry as it existed before specialty became a thing.

Now days we are accustomed to life in what we think of as a golden age of coffee. Producers routinely separate out their best coffees for individual sale, processing from harvest to bagging is monitored to preserve coffee flavor and there are a multitude of “name” estates and producers that have established international reputations as producers of unique coffees.

Back in the early 1990s, though, there were only two or three highly respected estate names in the business. First and foremost among them was the La Minita Costa Rica estate of Mr. William McAlpin. This pioneering estate became synonymous with the highest degree of excellence in coffee as a result of Mr. McAlpin’s uncompromising standards of production, even in the smallest details. He trained and compensated coffee pickers in an unprecedented system that ensured only ripe cherries are picked. The preparation after harvesting was impeccable and carried out at the mill owned by the estate. Workers received premium wages as well as a variety of benefits and social services. The result was a level of clarity and sophistication in the cup that was unmatched at the time.

For us it’s a great pleasure to revisit this elegant coffee that first graced our menu in 1993. Many of the practices first introduced at La Minita have become standard procedure for the production of excellent coffee around the world, and it can be easy to forget a time when La Minita stood virtually alone in terms of quality.

In the cup La Minita Costa Rica is a study in refined balance. Sweet aroma dominates the early stages, followed by full body, brilliant acidity, and delicately clean aftertaste.
