Guatemala Finca El Tambor 12oz
Victor Calderon represents the fifth generation of coffee farmers from a family that has been in coffee for more than 100 years. El Tambor, however, is a relatively new farm, just outside of Guatemala City. Victor bought the farm at the beginning of 2001, realizing his dream of revitalizing a farm at sufficient altitude to specialize in high-quality Arabica production. Victor manages the farm with eight year round employees. Each has a permanent residence on the farm, and ten percent of the farm is given over to the workers to produce their own vegetables. Nearly half the farm has been left untouched, and is set aside as a conservation area. All coffee is picked and processed in microlots of around 22 bags, selected according to location on the farm with attention to varietals making up the lots. Our lot consists of fully washed, sun dried Bourbon varietal grown at about 5,550 feet. In the cup El Tambor displays subtle complexities that kaleidoscope as it cools. Initially green apple notes dominate, soon followed by more citrus based flavors of orange zest and tamarind, all overlaid by a very clean brown sugar sweetness. The remarkably buttery mouthfeel leads into a finish rich in caramel and baker’s chocolate, finally ending where it begins with bright green apple.
